Things to pack for Australia this October?

I am going to Australia this October (coming from San Francisco)....I have never been on an international flight (flying with Virgin)....I know the laws are probably the same when it comes to packing toiletries, no bigger than 3oz bottles of shampoo, face wash, etc.... but how many of those bottles can I have in my carry on? Can I pack the full sized bottles in my luggage that I am checking? Also, do you suggest anything important to bring with me that will prove useful in Sydney, Cairns and Melbourne? Besides of course, sunscreen and a camera?
